Imagine tender, juicy chicken thighs roasted to perfection alongside vibrant, caramelized vegetables, all kissed with a bright, herby lemon dressing. It’s a complete meal that feels gourmet but takes barely any effort. Let’s get cooking and reclaim your evenings!

Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs (or bone-in, skin-on for extra crispiness)
  • 1 large head broccoli, cut into florets
  • 1 red bell pepper, cored and sliced
  • 1 zucchini, cut into half-moons
  • 1 red onion, cut into wedges
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Juice of 1 large lemon (about 3-4 tablespoons)
  • 1 tbsp dried Italian seasoning (or a mix of dried rosemary, thyme, and oregano)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley or cilantro, chopped (for garnish, optional)

Instructions:

  1. Preheat & Prep: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Combine & Dress: In a large bowl, combine the chicken thighs, broccoli florets, red bell pepper slices, zucchini, and red onion wedges. Add the minced garlic, olive oil, lemon juice, Italian seasoning, salt, and pepper. Toss everything together until the chicken and vegetables are evenly coated.
  3. Arrange on Pan: Spread the chicken and vegetables in a single layer on your prepared baking sheet. Ensure there’s a little space between each piece for even roasting and browning.
