Oh, hello there, fellow food adventurers! Today, I’m bringing you a dish that’s going to make your taste buds sing a symphony of joy. We’re talking about flaky, tender salmon, encased in a gorgeous, crunchy pistachio crust, all drizzled with a bright, zesty lemon-dill sauce. It’s elegant enough for a special occasion but surprisingly simple for a weeknight meal. Trust me, the texture contrast alone is a game-changer. Get ready to impress yourself!

Ingredients:

  • 4 (6 oz) salmon fillets, skin on or off
  • 1/2 cup shelled pistachios, unsalted
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

For the Lemon-Dill Sauce:

  • 1/4 cup plain Greek yogurt or sour cream
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon sea salt
  • Pinch of black pepper

Instructions:

  1. Preheat & Prep: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make the Pistachio Crust: In a food processor, combine the shelled pistachios, panko breadcrumbs, chopped parsley, garlic powder, onion powder, salt, and pepper. Pulse until the pistachios are finely chopped but still have some texture (don’t over-process into a paste). Pour the mixture onto a shallow plate.
  3. Prepare the Salmon: Pat the salmon fillets dry with paper towels. Lightly brush the top and sides of each fillet with olive oil.
  4. Crust the Salmon: Gently press the top and sides of each salmon fillet into the pistachio mixture, ensuring it’s evenly coated. Place the crusted salmon fillets on the prepared baking sheet.
  5. Bake the Salmon: Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of your fillets.
  6. Prepare the Lemon-Dill Sauce: While the salmon bakes, in a small bowl, whisk together the Greek yogurt (or sour cream), fresh dill, lemon juice, lemon zest, salt, and pepper until well combined.
  7. Serve: Once the salmon is ready, remove it from the oven. Serve immediately with a generous dollop or drizzle of the zesty lemon-dill sauce. Enjoy!
