Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 3 tbsp honey
  • 2 tbsp soy sauce (low sodium preferred)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • Optional: Sesame seeds and red pepper flakes for garnish

Instructions

  1. Prep the Sauce: In a small bowl, whisk together the honey, soy sauce, minced garlic, and grated ginger. Set aside.
  2. Sauté the Veggies: Heat olive oil in a large skillet over medium-high heat. Add the broccoli florets and a splash of water. Cover for 2-3 minutes until tender-crisp and bright green. Remove broccoli from the pan and set aside.
  3. Sear the Shrimp: In the same skillet, melt the butter. Add the shrimp in a single layer. Cook for 1-2 minutes per side until they turn pink and opaque.
  4. Combine: Pour the honey garlic sauce over the shrimp. Let it bubble and thicken for about 1 minute. Add the broccoli back into the pan and toss everything together until glazed and glossy.
  5. Serve: Garnish with sesame seeds and red pepper flakes. Serve immediately over rice, quinoa, or on its own for a low-carb treat.
