- 1 bunch (approximately 450g) fresh asparagus, woody ends trimmed
- 2 tbsp olive oil
- 1 lemon, half sliced, half for juice
- 2 cloves garlic, minced
- 2 tbsp fresh dill, chopped (plus more for garnish)
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper for easy cleanup.
- Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa, vegetable broth, and 0.5 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed and quinoa is fluffy. Remove from heat and let sit, covered, for 5 minutes before fluffing with a fork.
