And today, I’m sharing a recipe that embodies autumn’s embrace in every single spoonful: my Spiced Pear & Walnut Baked Oatmeal. Forget sad, soggy oats; this dish is a revelation! Imagine tender, baked oatmeal infused with aromatic spices, studded with sweet, juicy pears and crunchy walnuts, all baked to golden perfection. It’s hearty, wholesome, and incredibly satisfying, making your kitchen smell absolutely divine in the process. This isn’t just breakfast; it’s a hug in a bowl, perfect for a slow weekend morning or prepped ahead for a quick, delicious weekday treat. Let’s get baking!

Ingredients:

  • 2 cups rolled oats (not instant)
  • 1/2 cup chopped walnuts
  • 1/4 cup brown sugar, packed (or maple syrup)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 ripe pears, peeled, cored, and diced (e.g., Anjou or Bartlett)
  • 2 cups milk (dairy or non-dairy)
  • 1 large egg
  • 2 tbsp melted unsalted butter (plus extra for greasing)
  • 1 tsp vanilla extract
  • Maple syrup, for serving (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish with butter.
  2. In a large bowl, combine the rolled oats, chopped walnuts, brown sugar, cinnamon, ginger, nutmeg, and salt. Stir until well combined.
  3. Gently fold in the diced pears, ensuring they are evenly distributed throughout the dry ingredients.
  4. In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  5. Pour the wet ingredients over the dry ingredients in the large bowl. Stir gently until just combined, being careful not to overmix.
  6. Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.
  7. Bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set in the center. A toothpick inserted into the center should come out mostly clean.
  8. Remove from the oven and let it cool for 5-10 minutes before serving. This allows it to firm up slightly.
  9. Serve warm, optionally drizzled with extra maple syrup and a sprinkle of additional walnuts. Enjoy your cozy morning bliss!
