Ingredients
- 2 (6-oz) salmon fillets, skin on or off
- 1 tbsp olive oil, plus extra for veggies
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice, divided
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh chives
- 1 clove garlic, minced
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 lb thin asparagus, woody ends trimmed
- 1 pint cherry tomatoes
- Optional: lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, combine 1 tbsp olive oil, lemon zest, 1 tbsp fresh lemon juice, parsley, dill, chives, minced garlic, sea salt, and black pepper. Mix well to create your herb crust.
- Pat the salmon fillets dry with a paper towel. Place them on one side of the prepared baking sheet. Spoon the herb mixture generously over the top of each salmon fillet, pressing gently to adhere.
- On the other side of the baking sheet, arrange the asparagus and cherry tomatoes. Drizzle with a little extra olive oil, a pinch of salt, and pepper.
- Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp and slightly roasted. Cooking time will depend on the thickness of your salmon fillets.
- Remove from the oven. Drizzle the remaining 1 tbsp of fresh lemon juice over the salmon and vegetables.
- Serve immediately with extra lemon wedges, if desired. Enjoy your taste of the Mediterranean!
This dish is fantastic on its own, but also pairs beautifully with a side of quinoa or a light green salad for an even more filling meal!
