Ingredients

  • 2 (6-oz) salmon fillets, skin on or off
  • 1 tbsp olive oil, plus extra for veggies
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice, divided
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tbsp chopped fresh chives
  • 1 clove garlic, minced
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 lb thin asparagus, woody ends trimmed
  • 1 pint cherry tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
