This recipe brings all the vibrant flavors of Tuscany – sun-dried tomatoes, fresh spinach, and tender chicken – together with pillowy potato gnocchi in a rich, velvety cream sauce, all in a single skillet. Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder

  • 1/4 tsp black pepper
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1/2 cup chicken broth
  • 1.5 cups heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 (16 oz) package potato gnocchi (shelf-stable)
  • 5 oz fresh spinach
  • Fresh basil for garnish (optional)

Instructions:

  1. Pat the chicken pieces dry with paper towels. In a medium bowl, toss the chicken with olive oil, Italian seasoning, garlic powder, salt, and pepper until evenly coated.
  2. Heat a large, oven-safe skillet (cast iron or non-stick) over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned on all sides and mostly cooked through. Remove chicken from the skillet and set aside.
  3. Reduce heat to medium. Add the diced onion to the skillet and cook for 3-4 minutes until softened and translucent, scraping up any browned bits from the bottom of the pan.
