Ingredients
- 1 loaf (approx. 1 lb) challah or brioche bread, cut into 1-inch cubes (about 10-12 cups)
- 8 large eggs
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup pure maple syrup, plus more for serving
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
For the Pecan Topping
- 1/2 cup unsalted butter, melted
- 1/2 cup packed light brown sugar
- 1/2 cup chopped pecans
- 1 tablespoon pure maple syrup
- 1/2 teaspoon ground cinnamon
Instructions
- Prepare the Casserole Dish: Lightly grease a 9×13 inch baking dish. Arrange the bread cubes evenly in the prepared dish.
- Whisk the Custard: In a large bowl, whisk together the eggs, whole milk, heavy cream, 1/2 cup maple syrup, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined and smooth.
- Soak the Bread: Pour the egg mixture evenly over the bread cubes, making sure all pieces are coated. Gently press down on the bread to help it absorb the liquid. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, allowing the bread to fully soak up the custard.
- Preheat Oven & Prepare Topping: When ready to bake, preheat your oven to 375°F (190°C). In a small bowl, combine the melted butter, brown sugar, chopped pecans, 1 tablespoon maple syrup, and 1/2 teaspoon cinnamon. Mix until a crumbly topping forms.
- Bake the Casserole: Remove the casserole from the refrigerator. Sprinkle the pecan topping evenly over the soaked bread.
- Bake to Golden Perfection: Bake for 45-55 minutes, or until the French toast is golden brown, puffed, and the center is set (a knife inserted into the center should come out clean). If the topping starts to brown too quickly, you can loosely tent the dish with foil.
- Serve: Let the casserole cool for a few minutes before serving. Dust with powdered sugar, if desired, and serve warm with extra pure maple syrup on the side. Enjoy your stress-free, delicious brunch!
