Oh, friends, if there’s one dish that perfectly encapsulates the fresh, vibrant spirit of spring and yet offers that comforting, creamy hug we all crave, it’s this one! Today, I’m beyond excited to share my go-to recipe for Zesty Lemon Herb Creamy Chicken with Asparagus and Cherry Tomatoes. It’s ridiculously simple to make, yet tastes like something straight out of a fancy bistro. The chicken is seared to golden perfection, then simmered in a luscious, bright lemon-herb cream sauce, studded with tender asparagus and bursting cherry tomatoes. Serve it over pasta, rice, or even with a crusty piece of bread to soak up every last drop of that incredible sauce. Trust me, this dish is a weeknight wonder that feels utterly special!
Ingredients:
- 2 tablespoons olive oil
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- Salt and freshly ground black pepper to taste
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup fresh lemon juice
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped, plus more for garnish
- 1 teaspoon lemon zest
- 1 bunch asparagus, woody ends trimmed, cut into 1-inch pieces
- 1 cup cherry tomatoes, halved
- Optional: Cooked pasta or rice for serving
Step-by-Step Instructions:
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season chicken pieces generously with salt and pepper.
- Add chicken to the hot skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Reduce heat to medium. Add diced onion to the skillet and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Stir in the heavy cream, lemon juice, fresh thyme, parsley, and lemon zest. Return the chicken to the skillet.
- Add the asparagus pieces and halved cherry tomatoes. Simmer gently for 5-7 minutes, or until asparagus is tender-crisp and the sauce has slightly thickened.
- Taste and adjust seasoning if needed. Garnish with extra fresh parsley.
- Serve immediately over your favorite pasta, rice, or with crusty bread. Enjoy!
