One minute you’re enjoying a leisurely Sunday, the next you’re staring into the fridge at 6 PM, wondering what magic you can conjure that’s both delicious and requires minimal fuss. Well, my friends, I’m here to tell you that magic exists, and it comes in the form of this incredibly simple, vibrant, and utterly satisfying Zesty Sheet Pan Lemon Herb Salmon & Asparagus!
This dish is my go-to when I want something healthy, bursting with fresh flavors, and most importantly, involves just ONE pan for cleanup. Yes, you read that right. Less time scrubbing, more time savoring. The salmon bakes to flaky perfection, while the asparagus gets tender-crisp, all infused with a bright lemon and herbaceous aroma that will make your kitchen smell like a dream. It’s truly a weeknight dinner hero!
Ingredients:
- 2 (6 oz) salmon fillets, skin on or off
- 1 lb fresh asparagus, tough ends trimmed
- 2 tbsp olive oil
- 1 lemon, half thinly sliced, half juiced
- 2 cloves garlic, minced
- 1 tsp dried dill
- 1/2 tsp dried parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: Fresh dill or parsley for garnish
Instructions:
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried dill, dried parsley, salt, and pepper.
- Place the trimmed asparagus on one side of the prepared baking sheet. Drizzle about half of the lemon-herb mixture over the asparagus and toss to coat evenly.
- Arrange the salmon fillets on the other side of the baking sheet. Drizzle the remaining lemon-herb mixture over the salmon, ensuring both sides are coated.
- Top each salmon fillet with a few thin slices of lemon.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp. Cooking time may vary depending on the thickness of your salmon fillets.
