Finding the balance between a busy schedule and healthy eating can be a challenge, but these Honey Garlic Shrimp bowls make it effortless. This recipe is designed for maximum flavor with minimal cleanup, ensuring you have delicious, protein-packed lunches ready to go for the entire week.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 3 cups broccoli florets
- 1 cup uncooked jasmine rice or quinoa
- 3 tbsp honey
- 2 tbsp low-sodium soy sauce
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp olive oil
- 1 tsp red pepper flakes (optional)
- Green onions and sesame seeds for garnish
Instructions
- Cook the rice or quinoa according to package instructions and set aside to cool slightly.
- In a small bowl, whisk together the honey, soy sauce, garlic, and ginger to create the marinade.
- Heat olive oil in a large skillet over medium-high heat. Add the broccoli florets and a splash of water, then cover and steam for 3 minutes until tender-crisp.
- Remove the broccoli from the pan and add the shrimp. Cook for 2 minutes per side until pink.
- Pour the honey garlic sauce over the shrimp and add the broccoli back into the pan. Toss everything together for 1-2 minutes until the sauce thickens and coats the ingredients.
- Divide the rice into four meal prep containers, top with the shrimp and broccoli mixture, and garnish with green onions and sesame seeds.
