Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 cups broccoli florets
  • 1 cup uncooked jasmine rice or quinoa
  • 3 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp olive oil
  • 1 tsp red pepper flakes (optional)
  • Green onions and sesame seeds for garnish

Instructions

  1. Cook the rice or quinoa according to package instructions and set aside to cool slightly.
  2. In a small bowl, whisk together the honey, soy sauce, garlic, and ginger to create the marinade.
  3. Heat olive oil in a large skillet over medium-high heat. Add the broccoli florets and a splash of water, then cover and steam for 3 minutes until tender-crisp.
