Hey food lovers! Who’s ready for a dinner that’s bursting with flavor, incredibly easy to make, and leaves you with minimal cleanup? Today, I’m sharing one of my absolute favorite weeknight heroes: my Zesty Lemon-Herb Roasted Chicken with tender asparagus and sweet cherry tomatoes. This isn’t just any roasted chicken; it’s marinated in a creamy, tangy lemon-herb sauce that infuses every bite with a bright, aromatic punch. The best part? It all comes together on one sheet pan, making it perfect for those busy evenings when you crave something truly delicious without the fuss. Get ready to impress yourself (and anyone else lucky enough to be at your table!)
Ingredients:
- 1.5-2 lbs boneless, skinless chicken thighs (or breasts, adjust cooking time)
- 1 lb fresh asparagus, trimmed
- 1 pint cherry tomatoes
- 1/4 cup olive oil
- 3 tbsp fresh lemon juice
- 2 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional, for a kick)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a medium bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, fresh rosemary, fresh thyme, dried oregano, red pepper flakes (if using), salt, and pepper. This is your delicious lemon-herb marinade!
- Add the chicken thighs to the bowl with the marinade, tossing to coat them evenly. Let marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator.
- On the prepared baking sheet, arrange the marinated chicken thighs in a single layer.
- Around the chicken, scatter the trimmed asparagus and cherry tomatoes. Drizzle any remaining marinade over the vegetables.
- Roast for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the vegetables are tender-crisp. If using chicken breasts, cooking time might be slightly shorter.
