Oh, friends, do I have a treat for you today! Life gets busy, but that doesn’t mean we can’t bring a little gourmet magic to our weeknight tables. This Creamy Tuscan Salmon recipe is my go-to when I want something utterly delicious, deceptively simple, and that transports me straight to a sun-drenched Italian villa. Imagine perfectly seared, flaky salmon nestled in a rich, garlicky cream sauce bursting with vibrant sun-dried tomatoes and tender spinach. It’s comforting, elegant, and comes together faster than you can say ‘delizioso’! Trust me, this dish is pure culinary bliss.
Ingredients:
- 4 (6 oz) salmon fillets, skin on or off
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
- 5 oz fresh spinach
- 1 1/2 cups heavy cream
- 1/2 cup chicken or vegetable broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional, for a little kick)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Prepare the Salmon: Pat the salmon fillets dry with paper towels. Season generously with salt and black pepper on both sides.
- Sear the Salmon: Heat the olive oil in a large skillet or pan over medium-high heat. Once hot, add the salmon fillets, skin-side down if applicable. Sear for 4-5 minutes per side, or until golden brown and cooked to your desired doneness. Remove the salmon from the skillet and set aside on a plate.
- Build the Sauce: Reduce the heat to medium. Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Sauté for 1-2 minutes until fragrant.
- Add Liquids: Pour in the heavy cream and chicken/vegetable broth. Stir in the Italian seasoning and red pepper flakes (if using). Bring the sauce to a gentle simmer, stirring occasionally, and cook for 3-5 minutes, allowing it to thicken slightly.
- Incorporate Spinach and Parmesan: Stir in the fresh spinach a handful at a time, allowing it to wilt down before adding more. Once all the spinach has wilted, stir in the grated Parmesan cheese until melted and the sauce is smooth. Taste and adjust seasoning with salt and pepper as needed.
- Finish the Dish: Gently return the seared salmon fillets to the skillet, nestling them into the creamy Tuscan sauce. Let them simmer in the sauce for another 1-2 minutes to warm through and absorb the flavors.
- Serve: Garnish with fresh chopped parsley and serve immediately. This dish pairs beautifully with pasta, rice, or a simple crusty bread to soak up all that incredible sauce! Enjoy!
