When you need a meal that feels like a warm hug but you only have 20 minutes to spare, this One-Pan Creamy Sun-Dried Tomato & Spinach Gnocchi is the answer. It is rich, savory, and incredibly satisfying, bringing restaurant-quality flavors to your dinner table with minimal cleanup.

Ingredients

  • 1 lb shelf-stable or refrigerated potato gnocchi
  • 1/2 cup sun-dried tomatoes, thinly sliced
  • 2 cups fresh baby spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp red pepper flakes
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sun-dried tomatoes, sautéing for about 2 minutes until fragrant.
  2. Pour in the broth and heavy cream. Bring the liquid to a gentle simmer.
  3. Add the gnocchi directly into the skillet. Stir to coat, then cover the pan and cook for 5 to 6 minutes until the gnocchi are tender and have absorbed some of the sauce.
  4. Remove the lid and stir in the Parmesan cheese until the sauce becomes thick and velvety.
  5. Add the baby spinach and red pepper flakes. Stir constantly for 1-2 minutes until the spinach is perfectly wilted.
  6. Season with salt and pepper to taste. Serve immediately with an extra sprinkle of Parmesan if desired.
