When you need a meal that feels like a warm hug but you only have 20 minutes to spare, this One-Pan Creamy Sun-Dried Tomato & Spinach Gnocchi is the answer. It is rich, savory, and incredibly satisfying, bringing restaurant-quality flavors to your dinner table with minimal cleanup.
Ingredients
- 1 lb shelf-stable or refrigerated potato gnocchi
- 1/2 cup sun-dried tomatoes, thinly sliced
- 2 cups fresh baby spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp red pepper flakes
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sun-dried tomatoes, sautéing for about 2 minutes until fragrant.
- Pour in the broth and heavy cream. Bring the liquid to a gentle simmer.
- Add the gnocchi directly into the skillet. Stir to coat, then cover the pan and cook for 5 to 6 minutes until the gnocchi are tender and have absorbed some of the sauce.
- Remove the lid and stir in the Parmesan cheese until the sauce becomes thick and velvety.
- Add the baby spinach and red pepper flakes. Stir constantly for 1-2 minutes until the spinach is perfectly wilted.
- Season with salt and pepper to taste. Serve immediately with an extra sprinkle of Parmesan if desired.
