Welcome to the end of sad desk lunches! These Sticky Honey Garlic Meatball Bowls are the perfect blend of sweet, savory, and healthy. Packed with protein and fiber, they stay fresh and delicious all week long, making them the ultimate solution for your busy work week.

  • 1 lb ground turkey or lean beef
  • 1/2 cup panko breadcrumbs
  • 3 cloves minced garlic
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 2 cups fresh broccoli florets
  • 2 cups cooked jasmine rice
  • 1 tbsp sesame seeds for garnish
  1. Preheat your oven to 400°F (200°C). In a large bowl, combine the ground meat, panko breadcrumbs, and one clove of minced garlic. Shape into 1-inch meatballs.
  2. Arrange the meatballs and broccoli florets on a large parchment-lined baking sheet. Drizzle the broccoli with a little olive oil and a pinch of salt. Bake for 18-20 minutes until the meatballs are cooked through.
  3. While the meatballs bake, prepare the sauce by whisking together the honey, soy sauce, remaining garlic, and ginger in a small saucepan over medium heat. Simmer for 5 minutes until it thickens into a glossy glaze.
  4. Once the meatballs are done, toss them in the honey garlic glaze until well-coated. Divide the jasmine rice, roasted broccoli, and glazed meatballs into four meal prep containers. Garnish with sesame seeds and store in the fridge for up to 4 days.
