That’s why I’m SO excited to share my go-to recipe for effortless, delicious, and healthy meal prep: One-Pan Lemon Herb Chicken Sausage & Veggies!
This dish is a game-changer. Imagine tender, caramelized veggies mingling with savory chicken sausage, all kissed with a bright lemon-herb dressing. It’s packed with flavor, requires minimal cleanup, and best of all, you can whip up a batch on Sunday and enjoy nourishing meals all week long. No more takeout temptations when you have a fridge full of this goodness!
Ingredients:
- 1.5 lbs pre-cooked chicken sausage (e.g., apple, spinach & feta, or sundried tomato), sliced into 1/2-inch rounds
- 2 bell peppers (any color), deseeded and chopped into 1-inch pieces
- 1 medium zucchini, chopped into 1-inch pieces
- 1 red onion, chopped into 1-inch pieces
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 1 tablespoon dried Italian herbs (or a mix of dried oregano, thyme, rosemary)
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1/2 lemon (about 1-2 tablespoons)
- Fresh parsley or dill, chopped, for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C). Line a large baking sheet (or two smaller ones if needed) with parchment paper for easy cleanup.
- In a very large bowl, combine the sliced chicken sausage, bell peppers, zucchini, red onion, and cherry tomatoes.
- Drizzle the olive oil over the ingredients in the bowl. Sprinkle with Italian herbs, garlic powder, onion powder, salt, and black pepper. Toss everything gently until the sausage and vegetables are evenly coated.
- Spread the mixture in a single layer on the prepared baking sheet(s). Ensure not to overcrowd the pan, as this helps the vegetables roast and caramelize rather than steam.
- Roast for 20-25 minutes, stirring halfway through, until the vegetables are tender-crisp and slightly caramelized, and the sausage is heated through and lightly browned.
- Remove from the oven and immediately squeeze the fresh lemon juice over the hot sausage and vegetables. Toss gently to distribute.
- Serve warm, garnished with fresh parsley or dill if desired. For meal prep, allow to cool completely before portioning into airtight containers and refrigerating for up to 4-5 days. Enjoy over quinoa, rice, or on its own!
