In the world of healthy meal prepping, balance is everything. This Mediterranean Quinoa Power Bowl is designed to give you a perfect ratio of complex carbohydrates, plant-based proteins, and healthy fats. It is fresh, zesty, and takes less than 15 minutes to assemble if you have your quinoa ready!

Ingredients:

  • 1 cup cooked fluffy quinoa
  • 1/2 cup canned chickpeas, rinsed and drained
  • 1/2 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/4 cup red onion, finely sliced
  • 2 tbsp Kalamata olives, pitted
  • 1 tbsp crumbled feta cheese (optional)
  • Fresh parsley for garnish

Creamy Lemon-Tahini Dressing:

  • 2 tbsp premium tahini
  • Juice of half a lemon
  • 1 tsp maple syrup or honey
  • 1 clove garlic, minced
  • Warm water to thin

Instructions:

  1. In a wide bowl, lay down a base of cooked quinoa.
  2. Arrange the chickpeas, tomatoes, cucumber, onion, and olives in sections over the quinoa.
  3. In a small jar, whisk together the dressing ingredients until smooth, adding warm water one teaspoon at a time until you reach a pourable consistency.
  4. Drizzle the dressing generously over the bowl.
  5. Top with crumbled feta and fresh parsley. Serve chilled or at room temperature.
