Fuel Your Body with the Ultimate Power Bowl
In the world of healthy meal prepping, balance is everything. This Mediterranean Quinoa Power Bowl is designed to give you a perfect ratio of complex carbohydrates, plant-based proteins, and healthy fats. It is fresh, zesty, and takes less than 15 minutes to assemble if you have your quinoa ready!
Ingredients:
- 1 cup cooked fluffy quinoa
- 1/2 cup canned chickpeas, rinsed and drained
- 1/2 cup cherry tomatoes, halved
- 1/2 English cucumber, diced
- 1/4 cup red onion, finely sliced
- 2 tbsp Kalamata olives, pitted
- 1 tbsp crumbled feta cheese (optional)
- Fresh parsley for garnish
Creamy Lemon-Tahini Dressing:
- 2 tbsp premium tahini
- Juice of half a lemon
- 1 tsp maple syrup or honey
- 1 clove garlic, minced
- Warm water to thin
Instructions:
- In a wide bowl, lay down a base of cooked quinoa.
- Arrange the chickpeas, tomatoes, cucumber, onion, and olives in sections over the quinoa.
- In a small jar, whisk together the dressing ingredients until smooth, adding warm water one teaspoon at a time until you reach a pourable consistency.
- Drizzle the dressing generously over the bowl.
- Top with crumbled feta and fresh parsley. Serve chilled or at room temperature.
