Forget everything you thought you knew about healthy dinners being bland or unsatisfying. This pie is a symphony of flavors and textures: a rich, earthy, and warmly spiced lentil and sweet potato stew bubbling beneath a cloud of incredibly creamy, garlicky cauliflower mash. It’s hearty, deeply satisfying, and packed with plant-based goodness that will leave you feeling nourished from the inside out. Ingredients
- For the Spiced Lentil & Sweet Potato Filling:
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 2 carrots, finely diced
- 2 celery stalks, finely diced
- 3 cloves garlic, minced
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 large sweet potato, peeled and diced (about 2 cups)
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- 1 bay leaf
- 1/2 cup fresh spinach, chopped
- 1 tbsp balsamic vinegar
- Salt and freshly ground black pepper to taste
- For the Creamy Cauliflower Mash:
- 1 large head cauliflower, cut into florets
- 3 cloves garlic, peeled
- 1/4 cup nutritional yeast (optional, for a cheesy flavor)
- 1/4 cup unsweetened almond milk (or other plant-based milk)
- 1 tbsp olive oil or vegan butter
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Lentil & Sweet Potato Filling: Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery. Sauté for 8-10 minutes, or until softened. Add minced garlic and cook for another minute until fragrant.
- Stir in the rinsed red lentils, diced sweet potato, tomato paste, cumin, coriander, smoked paprika, dried thyme, and bay leaf. Pour in the vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender and most of the liquid has been absorbed.
- Remove the bay leaf. Stir in the chopped spinach until wilted, then add the balsamic vinegar. Season generously with salt and pepper to taste. If the mixture is too thick, add a splash more broth; if too thin, simmer uncovered for a few more minutes.
- Prepare the Creamy Cauliflower Mash: While the filling is simmering, steam or boil the cauliflower florets and whole garlic cloves until very tender (about 10-15 minutes). Drain well.
- Transfer the cooked cauliflower and garlic to a food processor or a large bowl. Add nutritional yeast (if using), almond milk, olive oil or vegan butter, salt, and pepper. Process or mash until smooth and creamy. Taste and adjust seasoning as needed.
- Assemble and Bake: Preheat your oven to 375°F (190°C). Spoon the lentil and sweet potato filling into a 9×13 inch baking dish (or individual ramekins).
- Carefully spread the creamy cauliflower mash evenly over the top of the filling, creating a decorative swirl with the back of a spoon if desired.
- Bake for 20-25 minutes, or until the filling is bubbly and the cauliflower mash is lightly golden brown on top.
