The Ultimate Weeknight Comfort Meal
When you’re craving something fancy but only have 30 minutes, this one-pan wonder is your best friend. Juicy chicken meets silky orzo in a rich, garlicky sauce that the whole family will love.
Ingredients
- 1 lb Chicken thighs, bite-sized
- 1 cup Orzo pasta
- 2 cups Chicken broth
- 3 cloves Garlic, minced
- 1/2 cup Heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 cups Fresh spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, and Italian seasoning. Brown in a large skillet over medium-high heat.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in the dry orzo and chicken broth. Bring to a boil, then reduce heat to a simmer.
- Cover and cook for 10-12 minutes until orzo is tender and liquid is mostly absorbed.
- Stir in heavy cream, parmesan, and spinach. Let the spinach wilt for 2 minutes.
- Serve warm with extra parmesan!
