But what if I told you comfort could also be vibrantly healthy, bursting with flavor, and leave you feeling utterly satisfied? Enter my all-time favorite, often-requested weeknight hero: Spicy Chipotle Black Bean & Quinoa Stuffed Bell Peppers with a luscious Creamy Avocado Drizzle. This isn’t just a recipe; it’s a hug in a pepper, packed with plant-based protein, fiber, and so much zest, you’ll forget it’s good for you! The smoky heat from the chipotle, the earthy quinoa, the hearty black beans, and that cool, creamy avocado finish… it’s pure magic. Perfect for meal prep or a delightful family dinner, these peppers are about to become your new healthy obsession.

Ingredients

  • 4 large bell peppers (any color, vibrant variety preferred)
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth (or water)
  • 1 tbsp olive oil
  • 1 medium red onion, finely diced
  • 2 cloves garlic, minced
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1-2 chipotle peppers in adobo sauce, minced (adjust to your spice preference)
  • 1 tbsp adobo sauce from the can
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 cup fresh cilantro, chopped, plus more for garnish
  • Juice of 1 lime
  • Salt and freshly ground black pepper to taste
  • 1/2 cup shredded Monterey Jack or cheddar cheese (optional, for topping)

For the Creamy Avocado Drizzle:

  • 1 ripe avocado
  • 1/4 cup plain Greek yogurt or sour cream
  • Juice of 1/2 lime
  • 2 tbsp water (or more, to reach desired consistency)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the peppers upright.
  2. Prepare the bell peppers: Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place them cut-side up in the prepared baking dish.
  3. Cook the quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed and quinoa is fluffy. Set aside.
  4. Sauté the aromatics: While quinoa cooks, heat olive oil in a large skillet over medium heat. Add diced red onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  5. Make the filling: Stir in the rinsed black beans, corn, minced chipotle peppers, adobo sauce, cumin, and chili powder. Cook for 3-5 minutes, allowing the flavors to meld.
  6. Combine and season: Remove the skillet from heat. Fluff the cooked quinoa with a fork and add it to the skillet with the bean mixture. Stir in the chopped cilantro and lime juice. Season generously with salt and pepper to taste.
  7. Stuff the peppers: Spoon the quinoa-bean mixture generously into each bell pepper half. If using, sprinkle the optional shredded cheese over the top of each stuffed pepper.
  8. Bake: Pour about 1/4 cup of water into the bottom of the baking dish (this helps steam the peppers and keeps them from drying out). Cover the baking dish loosely with foil and bake for 30 minutes. Remove the foil and bake for another 10-15 minutes, or until peppers are tender-crisp and the filling is heated through (and cheese is bubbly, if used).
  9. Prepare the Avocado Drizzle: While peppers bake, combine the ripe avocado, Greek yogurt/sour cream, lime juice, water, and a pinch of salt in a small food processor or blender. Blend until completely smooth and creamy. Add more water if needed to reach a pourable consistency.
  10. Serve: Remove peppers from the oven. Drizzle generously with the creamy avocado sauce. Garnish with extra fresh cilantro, if desired. Serve hot and enjoy!
