It’s vibrant, packed with flavor, incredibly healthy, and best of all? Minimal cleanup. We’re talking one sheet pan, folks! The tender, flaky salmon, bright lemon, fragrant herbs, and perfectly roasted asparagus and burst cherry tomatoes come together in a symphony of taste that feels gourmet but takes mere minutes to prep. Say goodbye to endless pots and pans and hello to your new favorite stress-free dinner.
Ingredients:
- 2 (6 oz) salmon fillets, skin on or off
- 1 lb thin asparagus spears, tough ends trimmed
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 1 lemon, half thinly sliced, half juiced
- 2 cloves garlic, minced
- 1 tsp dried dill
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper to taste
- Fresh parsley or chives, chopped, for garnish (optional)
Step-by-Step Instructions:
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the trimmed asparagus and cherry tomatoes. Drizzle with 1 tablespoon of olive oil, salt, and pepper. Toss gently to coat.
