Something that transports me to a bustling, aromatic market in a far-off land, right from my own kitchen. And lately, that craving has been perfectly satisfied by this incredible Spiced Chickpea & Spinach Tagine with Lemon-Mint Couscous. It’s not just a meal; it’s an experience!

This dish is a vibrant symphony of warming spices, hearty chickpeas, fresh spinach, and sweet tomatoes, all slow-cooked (or quick-cooked, if you prefer!) to perfection. Paired with fluffy, zesty couscous brightened with lemon and fresh mint, it’s a complete meal that’s packed with plant-based protein, fiber, and an abundance of nutrients. Plus, your kitchen will smell absolutely divine. Forget bland healthy eating; this is healthy eating that truly sings!

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/2 tsp sweet paprika
  • 1/4 tsp cayenne pepper (optional, for a kick)
  • 1/4 tsp ground cinnamon
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can diced tomatoes, undrained
  • 2 (15 ounce) cans chickpeas, rinsed and drained
  • 3 cups vegetable broth
  • 1 bay leaf
  • 5 oz fresh spinach, roughly chopped
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro or parsley, chopped, for garnish

For the Lemon-Mint Couscous

  • 1 cup whole wheat couscous
  • 1.5 cups hot vegetable broth or water
  • 1 tbsp olive oil
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1/4 cup fresh mint, finely chopped
  • Salt to taste

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened and translucent, about 5-7 minutes. Add minced garlic and grated ginger, cooking for another minute until fragrant.
  2. Bloom Spices: Stir in cumin, coriander, turmeric, paprika, cayenne (if using), and cinnamon. Cook for 30 seconds, stirring constantly, until the spices are fragrant. This step really brings out their flavor!

  5. Prepare Couscous: While the tagine simmers, prepare the couscous. In a medium bowl, combine the whole wheat couscous with hot vegetable broth or water, olive oil, and a pinch of salt. Stir briefly, cover, and let sit for 5 minutes, or until all liquid is absorbed.
  6. Fluff and Flavor Couscous: Uncover the couscous and fluff with a fork. Stir in the lemon zest, fresh lemon juice, and chopped fresh mint. Taste and adjust seasoning if needed.
