Ingredients
- 2 large boneless skinless chicken breasts (halved lengthwise)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup sundried tomatoes, chopped
- 1.5 cups heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh baby spinach
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the chicken halves with salt, pepper, Italian seasoning, and smoked paprika.
- In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 5-7 minutes per side until golden brown and cooked through. Remove chicken from the pan and set aside.
- In the same skillet, add the minced garlic and sundried tomatoes. Sauté for 1-2 minutes until fragrant.
- Reduce heat to medium-low and pour in the heavy cream. Bring to a gentle simmer.
- Stir in the Parmesan cheese until melted and the sauce begins to thicken.
- Add the spinach and stir until it begins to wilt into the sauce.
- Add the chicken back into the skillet, spooning the sauce over the top. Let it simmer for another 2 minutes to heat through.
