Today, I’m sharing a recipe that will elevate your breakfast game from ordinary to extraordinary: my incredibly Fluffy Lemon Ricotta Pancakes. These aren’t just any pancakes; they’re light as a cloud, infused with bright lemon zest, and boast a tender crumb thanks to the creamy ricotta cheese. And to take them over the top? A vibrant, easy-to-make blueberry compote that bursts with juicy sweetness. Forget the diner, you’re about to create a five-star brunch experience right in your own kitchen!

Ingredients

For the Fluffy Lemon Ricotta Pancakes:

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ¼ cups buttermilk (or use 1 ¼ cups milk + 1 tablespoon lemon juice, let sit 5 mins)

Instructions

First, prepare the Blueberry Compote:
